MEDAN MIXED ICE RECIPE – This beverage has a unique and special taste. The sauce is made of coconut milk and syrup, and the syrup used here is a syrup made from brown sugar so it is sweet. The main contents of this beverage are red beans and canned sweet corns. It is also added with jackfruit, fermented cassava, flour droplets, and pomegranate seeds. Ingredients

  • 150 g red beans
  • 100 g jackfruit
  • 100 g fermented cassava
  • 50 g canned sweet corns
  • 50 g pomegranate seeds
  • 100 g flour droplets
  • Shaved ice

Syrup, coconut milk sauce

  • 100 g brown sugar
  • 200 ml coconut milk from ½ coconut
  • 50 g sugar
  • ¼ tsp salt
  • 200 ml water
  • 2 pandan leaf, knotted
  • 1 pandan leaf, chopped

Steps

  1. Wash off the red beans. If you use dried beans, first you have to soak it for some hours, drain. Boil the red beans until soft, remove from the heat, drain. Chop the jackfruit into 1 x 1 cm, chop the fermented cassava into dice shape of 1 cm.
  2. Syrup: cook together the brown sugar, sugar, water, and pandan leaf until boiled, remove from the heat, strain, set aside.
  3. Coconut milk sauce: cook the coconut milk together with salt and pandan leaf until boiled (you should keep stirring in order not to make the coconut milk separated), remove from the heat, set aside until cool.
  4. Serving: prepare a serving bowl/ glass, put red beans, chopped jackfruit, chopped fermented cassava, sweet corn, pomegranate seeds, and flour droplets into it. Pour with the coconut milk, add the shaved ice and syrup on it.
