SPECIAL CASSAVA CAKE RECIPE – Astin, my co-worker at work is well known as the cassava lover. She made cassava cake limitless times over the years for us who repeatedly requested the classic nice dessert when there is any office gatherings. This wonderful dessert is not only popular in a potluck but also a favorite all year-round. We couldn’t stop eating until our stomach was bloated. The cassava cake felt like it could give a smile in every bite.

Because it was a big hit at the potluck, so we knew that we must get the recipe. To our surprise, her special cassava cake actually is very easy to make and uses basic ingredients. The main ingredient you need is indeed grated cassava (perhaps bought from Asian grocery stores) and then you should grab eggs, sugar, coconut milk, vanilla extract, and butter when you are ready to make the recipe.

Ingredients

  • 1 1/4 kg grated cassava
  • 4 eggs
  • 250 grams sugar
  • 2 cups coconut milk
  • Vanilla extract to taste
  • 200 grams butter, melted

Directions

  1. Combine sugar and eggs until expand.
  2. Stir in vanilla extract. Combine for the second time.
  3. Add grated cassava and coconut milk in rotation.
  4. Lastly, stir in melted butter. Mix well.
  5. Put in baking dish which has been greased with flour.
  6. Bake until cooked or the edge turns golden in color. (*Baking time depends on oven temperature, check occasionally to avoid burn).

The cheese topping or creamy milk is optional as the cake itself tastes good on its own.

If you only used cassava as either a garnish or an appetizer, give it a more major role then. Cassava which is native to Brazil and Paraguay and becomes a staple food throughout Indonesia and Thailand, as well as parts of Africa is perfect ingredient for a hearty dessert and a heavy snack. It a good source of manganese and a very good source of vitamin C. In addition, adding cooked cassava to your diet offers health benefits because of its vitamin, mineral and fiber content.
