STRUSSEL FRUIT CAKE RECIPE – Have you ever felt the sensation of cake with apricot and blueberry? Yes, many people recognize this cake as strussel fruit cake. This cake can be a tasty healthy snack idea for your day. Let’s take a look at the following recipe.

Ingredients

  • 150 gr margarine
  • 4 eggs
  • 150 gr sugar
  • 150 gr wheat flour
  • ½ teaspoon baking powder
  • 250 gr apricot inside the tin, chopped

Strussel topping

  • 150 gr wheat flour
  • 75 gr margarine
  • 50 gr sugar
  • 150 gr blueberry inside the tin, set aside

 Directions

  1. Preheat oven to 175 Celsius temperature. Using baking pan with size 26x18x3 cm, cover the baking pan with cake paper and smear with margarine. After that, spread wheat flour onto the baking pan. Set aside.
  2. Strussel topping: mix wheat flour with margarine. Stir well. Set aside.
  3. Mix well margarine and sugar. Add egg one by one and keep stirring until they are soft in texture.
  4. Add wheat flour and baking powder. Stir well and then add apricot slices and pour the mixture into the baking pan. Spread the blueberry strussel onto it.
  5. Bake for 35 until it is cooked. Remove and set aside.
  6. Slice the cake based on your preference. Strusel fruit cake is ready to be served.
