Slow Cooker Butter Chicken Recipe


  • 1 tablespoon olive oil
  • 4 cloves garlic, crushed
  • 1 onion, diced
  • 1 (14-ounce) can light coconut milk
  • 1 (6-ounce) can tomato paste
  • 2 tablespoons whole wheat flour
  • 2 teaspoons garam masala
  • 1 teaspoon curry powder
  • 1/2 teaspoon chili powder, or more, to taste
  • 1/2 teaspoon ginger powder
  • Kosher salt and freshly ground black pepper, to taste
  • 3 pounds boneless, skinless chicken breasts, cut into 2-inch pieces
  • 2 tablespoons chopped fresh cilantro leaves


  1. Heat olive oil in a large saucepan over medium high heat.
  2. Add garlic and onion, and cook, stirring frequently, until onions have become translucent, about 2-3 minutes.
  3. Stir in coconut milk, tomato paste, flour, garam masala, curry powder, chili powder and ginger powder until well combined and slightly thickened, about 1-2 minutes; season with salt and pepper, to taste.
  4. Place chicken into a slow cooker.
  5. Add sauce mixture and gently toss to combine. Cover and cook on low heat for 5 hours.
  6. Serve immediately, garnished with cilantro, if desired.

Cilantro Lime Chicken with Avocado Salsa

  • 1.5 lb. boneless chicken breast
  • ¼ cup lime juice
  • 2 tablespoons olive oil
  • ¼ cup fresh cilantro
  • ½ teaspoon ground cumin
  • ¼ teaspoon salt

Avocado Salsa Ingredients

  • 4 avocados, diced
  • ½ cup fresh cilantro, diced
  • 3 tablespoons lime juice
  • ½ tablespoon red wine vinegar
  • ½ teaspoon red pepper flakes
  • 1 garlic clove, minced
  • salt to taste




  1. To a small bowl, add ¼ cup of lime juice, olive oil, ¼ cup of fresh cilantro, ground cumin, and ¼ teaspoon of salt. Whisk until mixed.
  2. Add chicken and marinade to a large ziplock bag. Let chicken marinade for 15 minutes.
  3. Preheat grill to medium high heat (about 400 degrees).
  4. Place chicken on grill and grill each side for 4-6 minutes, until chicken is no longer pink. Remove and let sit.
  5. To make the avocado salsa: add avocado, ½ cup fresh cilantro, 3 tablespoons lime juice, red wine vinegar, red pepper flakes, garlic clove, and salt to a small bowl.
  6. Gently toss to mix.
  7. Top Cilantro Lime Chicken with fresh Avocado Salsa.

Chicken Fajita Sizzling Salad

  • 12oz chicken breasts, cut into strips
  • 1/2 onion, thinly sliced
  • 1 zucchini, cut into sticks or 1 green bell pepper, sliced
  • 1 Tablespoon canola or vegetable oil, divided
  • 6 cups chopped romaine lettuce
  • 1 tomato, cut into wedges
  • 1/2 avocado, chopped

Marinade Ingredients:

  • juice of 1/2 lime
  • 1-1/2 Tablespoons olive oil
  • 1 garlic clove, crushed
  • 1/2 teaspoon salt
  • 1/4 teaspoon cumin
  • 1/4 teaspoon chili powder
  • 1/2 jalapaeno, seeded and minced
  • 2 Tablespoons chopped cilantro

Cilantro-Lime Vinaigrette ingredients

  • juice of 1/2 lime
  • 1/4 cup cilantro
  • 2 Tablespoons canola or vegetabke oil
  • 1 Tablespoon red wine vinegar
  • 1 garlic clove
  • salt & pepper


  1. Combine marinade ingredients in a large bowl then add chicken and toss to coat. Cover then let sit and marinate at room temperature for 30 minutes.
  2. Combine ingredients for Cilantro-Lime Vinaigrette in a food processor or blender then process until smooth. Set aside.
  3. Heat 1/2 Tablespoon oil in a large cast iron pot or skillet, or heavy-bottomed skillet on high.
  4. Remove garlic clove from chicken then carefully add in one layer on the bottom and cook for 1 minute undisturbed.
  5. Stir then saute until cooked through, about another minute or two. Remove chicken to a plate and set aside.
  6. Heat remaining 1/2 Tablespoon oil in pot then add onions and zucchini (or bell pepper, if using.)
  7. Cook for 1 minute, undisturbed, then stir and saute until tender, about another minute.
  8. Add chicken back into the pot then stir to combine.
  9. Divide lettuce, tomatoes, and avocado between two plates then top with cooked chicken. Drizzle with Cilantro-Lime Vinaigrette.
