LAYERED KOLAK PUDDING RECIPE – Kolak is a special food tasted in Ramadan for Iftar. It combines some fruits cooked with palm sugar chutney and coconut milk. Indonesian people are very familiar with this sweet food. Now, we are going to give you a variant of kolak called Layered Kolak Pudding recipe. It is not like kolak tasted in Ramadan actually but it is a kind of pudding cooked with Ambon banana combined with pumpkin pudding. Let’s check this recipe out, guys.

Pumpkin Pudding Ingredients

  • 1 pack chocolate gelatin powder
  • 1 piece pandan leaf
  • 700 ml coconut milk
  • 150 g sugar
  • ¼ tsp. salt
  • 100 g pumpkin, steamed and mashed

Palm Sugar Pudding Ingredients

  • 150 g Ambon banana, flower sliced
  • 1 pack white gelatin powder
  • 175 g palm sugar, thinly sliced
  • ¼ tsp. salt
  • 800 ml water
  • ¼ tsp. vanilla extract


  1. Pumpkin Pudding: Put the chocolate gelatin powder, pandan leaf, coconut milk, sugar, and salt in a pan. Cook them at low heat until boiled. Add the mashed pumpkin, stir well until boiled again and remove from the heat. Pour the pudding into the serving glass, let it cool.
  2. Palm Sugar Pudding: Steam the banana until cooked, remove from the heat and set aside. Put the white gelatin powder, palm sugar, salt, and water in the pan. Cook them at low heat until well boiled. Add the banana and vanilla extract, stir and remove from the heat. Pour the pudding on the top of the pumpkin pudding and let it cool. Lastly, pour the pumpkin pudding again on the top of the palm sugar pudding and let it cool.
  3. Decorate Layered Kolak Pudding with whipped cream, flower sliced banana, and sliced pandan leaf. Now it can be served.

Note: Make approximately 12 puddings.
