MUNG BEAN PUDDING RECIPE – Mung bean has small size among other beans. Beside it can be made as food and beverage, it also has benefit to heal many diseases. Pudding Ingredients

  • 1 pack gelatin powder
  • 120 g sugar
  • 50 g mung bean
  • 75 ml OMELA creamer
  • 75 ml KARA coconut milk
  • 700 ml water
  • 1 cm ginger (pounded)
  • 2 pieces pandan leaves
  • Vanilla extract

Sweet Sauce Ingredients

  • 2 tbsp finely chopped brown sugar
  • ½ tbsp cornstarch
  • 150 ml water
  • 1 cm ginger
  • 1 tbsp rum essence

Garnish

  • Cherry
  • Ginger (obliquely chopped)
  • Pandan leaf

Steps

  1. Cleanse the mung bean, then boil together with water, ginger, pandan leaf, and salt. After it is tender, add 60 g sugar, stir until the sugar dissolved. Remove from the heat.
  2. Strain the decoction water of the mung bean, throw away pandan leaf and ginger, put into a measuring glass then add water until 400 ml. Then blend until soft, add ½ pack gelatin powder then cook. After that, put in the small mold.
  3. Put creamer and coconut milk into the measuring glass then add water until 400 ml. Cook it together with the rest of gelatin powder, 60 g sugar, a pinch of salt, pandan leaf, and vanilla extract.
  4. Put 2 tbsp white gelatin mixture into an ice cream cup, wait until solid, add mung bean jelly in the center, then add again white gelatin mixture until full.
  5. Sweet sauce: mix brown sugar together with ginger and water, stir until dissolved, strain. Add corn starch then cook until coagulated. Last, add the rum essence, stir.
