COW KNUCKLE SALAD RECIPE WITH ROJAK – What if the cow knuckle and rojak sauce is made together into one menu? Seems like it will be a delicious menu. The menu is cow knuckle salad with rojak sauce. Ingredients

  • 450 grams beef kikil (beef knuckle)
  • 100 grams tempeh
  • 1000 ml water to boil
  • 100 grams tofu
  • 300 ml cooking oil
  • 100 grams kale
  • Lontong as complement
  • 100 grams bean sprouts

Sauce

  • 100 grams peanuts
  • 50 grams sugar
  • 2 tablespoons shrimp paste
  • 3 cloves of garlic
  • 1/2 teaspoon salt
  • 50 ml tamarind water 

Directions

  1. Clean kikil (beef knuckle) hairs then wash. Bring to boil 750 ml of water over high heat and boil beef knuckle until cooked and tender. Remove and drain. After rather cool, cut beef knuckle into small pieces, set aside. Cut tofu and tempeh into small cubes. Heat the oil over medium heat and fry the pieces of tempe and tofu separately until the color turns brown. Remove and drain, set aside.
  2. Wash spinach and bean sprouts. Kale, take the leaves and discard bean sprouts roots and set aside. Boil the rest of the water over high heat and boil the leaves of kale for 10 minutes. Remove and drain, set aside. Bring to a boil again the left water and boil beansprouts for 5 minutes. Remove and drain, set aside.
  3. Sauce: Stir-fry peanuts to dry and garlic until it turns yellowish in color, then roughly mash them. Set aside. Pound the brown sugar, sugar, paste, and salt. Add peanuts and garlic. Blend again until smooth, then add the tamarind water. Stir until blended. Set aside.
  4. Cut lontong and put in some serving bowls. Then place spinach, bean sprouts, tofu, tempeh,and knuckle. Then pour peanut sauce on top and serve immediately with shrimp crackers or chips.
