  • 6 chicken breast
  • 3/4 teaspoon salt
  • ½ teaspoon black pepper, crushed
  • 5 oranges
  • 2 lemon
  • 100 ml water
  • 50 grams  butter
  • 100 grams sugar
  • 500 ml chicken stock
  • 1/2 teaspoon black pepper powder
  • 11/2 teaspoon tapioca flour, dissolved with a little bit of water


  1. Rub chicken breasts with salt and black pepper. Leave it for 30 minutes.
  2. Peel oranges and lemons peel, pay attention not to expose the white part in order the taste is not bitter. Slice thinly orange, peel thin and lengthwise.
  3. Heat 100 ml water and 70 grams sugar until the sugar dissolves. Stir in orange peel slices. Cook until the liquid is shrinking. Lift and set aside.
  4. Chop meat, oranges and lemon.
  5. Heat 30 grams sugar in a pan until becomes caramel. Add butter.
  6. Pour broth and  chopped oranges meat. Cook over low heat while close the pan for 1 hour. Lift and filter the lees.
  7. Boil for another time while add salt and pepper as well as tapioca water. Cook until thick and bubbling. Lift.
  8. Cook chicken over pan while keep turning the meat until chicken skin dries and the meat is cooked. Lift.
  9. Slice the chicken breast.
  10. Serve oranges sauce and orange peel candied.
