SALMON SOUP RECIPE – Last weekend, I spent my weekend in my aunt’s house. In the morning, when my cousins and I felt so hungry, we just found out that my aunt had some fresh salmon in the fridge.

We were begging her to cook it but not that kind of  usual grilled salmon steak. Finally, after some group discussion, she decided to give something different a try, salmon soup! It is a comfort soup. A quick to make meal in a bowl and super easy as usual.

Ingredients

  • 1 kg fresh salmon (cut according to taste)
  • 200 gr. potatoes (diced)
  • 2 carrots (thinly sliced)
  • 3 bay leaves (washed clean)
  • 5 kaffir lime leaves (washed clean)
  • 2 stalk lemon grass (mashed)
  • 3 cm turmeric (mashed)
  • 2 cm ginger (mashed)
  • 2 cm galangal (mashed)
  • 3 tablespoons lime juice
  • 3 tomatoes (cut into pieces)
  • 2 stalk celery (finely sliced)
  • 2 stalk scallion pods (sliced)
  • water to taste
  • salt to taste
  • sugar to taste

Grounded seasoning

  • 4 cloves garlic
  • 6 onions
  • 2 roasted hazelnut
  • 1/2 teaspoon pepper powder

Directions

  1. Stir-fried grounded seasoning until aromatic.
  2. Stir in lemongrass stalk, bay leaf, lime leaves, turmeric and ginger.
  3. Pour water into a stir fry seasoning and then wait until boiling.
  4. Stir in piece of salmon, potatoes and carrots and then add sugar and salt. Wait until done.
  5. Turn off the heat and then add tomato pieces and sprinkling of celery leaves and  scallion pods slices on top.
