SCRAMBLED TOFU RECIPE – Hi guys, recently, I’ve been loving tofu for breakfast. Yup, when it’s chilly outside, I have a big desire for warmer breakfast foods. Scrambled eggs is definitely a nice savory healthy option. It makes such a fresh satisfying meal to have in the morning! You certainly will agree with me. If usually you have regular morning scrambled eggs, whether you got tired of it or you want a new menu, give this scrambled tofu recipe a try then. Scrambled tofu texture is similar to scrambled eggs, but it is just versatile.  I am sure you’ll still get some protein to fuel you to do your activities in the morning.

  • 3 tofu, mashed
  • 1 free range egg (*optional)
  • 3 carrots, peeled and cut into matchsticks
  • ¼ cabbages
  • 1 shallot
  • 2 red and green chilies, sliced
  • 5 cloves of onions, roughly chopped
  • 3 cloves of garlic, roughly chopped
  • 1/2 teaspoon finely ground pepper


  1. Stir-fried shallots until wilted and then stir in onions and garlic. Keep stirring until the aroma fills the room. Pour in 250 ml water, bring to a boil.
  2. Once boiling, add sugar, pepper, and mashed tofu. Combine.
  3. Add cabbages, carrots, and chilies. Keep gently stirring until slightly
  4. Once tender, stir in eggs mixture and salt. Cook and give a final stir until the eggs done.

Serve warm with cooked rice or toast as you like. Another option, you can serve it with fresh fruit or take it on the go in a breakfast wrap or sandwich.
