  • Chicken meat from 1 chicken
  • 1 cup cooking oil
  • 300 cc water

Seasoning (grounded, made into 2 portions)

  • 6 shallots
  • 2 tomatoes
  • 4 garlic
  • 1 ginger
  • 100 grams red chilies
  • 1 teaspoon sugar
  • salt to taste

  1. First of all, clean the chicken and cut it into 4 parts.
  2. After that, heat oil and then stir-fried the half spices until the aroma fills the room.
  3. Stir in chicken and then keep cooking until the spices blend together.
  4. Add a little water and cook until chicken half-done. Lift.

Rica-rica or sometimes simply called rica is a type of hot and spicy seasoning, a typical food from Manado, North Sulawesi, Indonesia. Rica-rica is also popularly known as Madonese style grilled chicken. Rica means chili in the local language. Manado is well-known for their delicious spicy food and in the cuisine, almost all kinds of meats, poultry, freshwater fishes and seafood can be made into rica-rica dish. However, the most popular perhaps is ayam rica-rica (chicken rica-rica). In common, this dish uses a lot of chopped or ground red and green chili peppers, bird’s eye chili, shallots, garlic, ginger, and a pinch of salt and sugar. All that grounded spices are cooked in coconut oil and mixed with lime leaf, bruised lemongrass and lime juice.

Most noteworthy, for those of you who prefer the chicken to be sour, you can add lime juice to the recipe. While for you who cannot tolerate too spicy taste, feel free to reduce the amount of chili use in the preparation.
