  • 4 tablespoons or more thick sweet soy sauce
  • 2 tablespoons smooth brown sugar
  • 2 tablespoons cooking oil
  • A little tamarind water and lime juice to to help remove the unpleasant smell (for smearing)
  • ½ tablespoon salt (for smearing)
  • 10 cloves of garlic (grounded, for spices)
  • ½ tablespoon coriander (grounded, for spices)
  • 4 cm ginger. Peel the outer skin and then cut into pieces so that it would be easily mashed (for spices).

  • 2 teaspoons salt to taste (for spices)

DIRECTIONS

  1. After the fish is cleaned, mash garlic, ginger, coriander, turmeric and add 2 teaspoon of salt until really smooth.
  2. Smear mashed spices onto the fish.
  3. Let the spices absorbed into the meat, approximately 3 hours – 3.5 hours. We recommend you to store the spices fish in the fridge to keep the fish fresh. If you want faster process, after smearing the fish with seasoning, cover the meat briefly for about 3-4 minutes.
  4. While waiting for the seasoning to absorb deeper, take one medium-size container and put the rest of the ingredient, such as sweet soy sauce, oil, salt, brown sugar and a little lemon juice and tamarind juice.
  5. Smearing spices: Mix well all ingredients until well blended.
  6. Smear the fish with the spices until evenly and then grill the fish from one side to the other.
  7. Don’t forget to once in a while smear the spices onto the grilled fish for another time and keep turning so that the meat not overcooked.
  8. After the fish is done, place the grilled fish on the serving dish. Add the soy sauce.

  1. Wash clean red and green chilies and then slice.
  2. Prepare sweet soy sauce or spicy soy sauce if you like, lime juice, minced shallot, minced garlic, and slices of fresh tomato.
