TEMPOYAK CURRY RECIPE – Perhaps for some people who never heard about tempoyak will have some questions related of what tempoyak actually is. Tempoyak is salty condiment made of fermented durian. And do you know what? Tempoyak can be a food seasoning. There are so many food recipes can be made using tempoyak as the ingredient, for instances gulai or curry, tempoyak sauce, and pepes tempoyak. This time we will present you a recipe with iridescent shark as the main ingredients which cooked with tempoyak.

Ingredients

  • 1 kg iridescent shark, chopped
  • 2 cm ginger
  • 175 gr tempoyak
  • 2 lemongrass, pounded
  • 800 ml water
  • 2 tablespoons frying oil
  • 4 kaffir lime leaves
  • 2 bay leaves

Softened seasoning

  • 10 red chilies
  • 8 onions
  • 5 cloves of garlic
  • 3 candlenuts
  • 1 cm ginger plant
  • 2 teaspoon salt
  • 1 tablespoon sugar
  • 2 cm turmeric

Directions

  1. Stir-fried the grounded seasoning, kaffir lime leaves, bay leaves, and lemongrass until the aroma fills the room.
  2. Add tempoyak and water, boil until cooked.
  3. Add iridescent shark, boil until the meat is cooked and the seasoning soaks in. Set aside and remove.
