VEGETABLE CURRY RECIPE – Curry has two definitions. It is a blend of ground spices including cayenne or red pepper, coriander, cumin, and turmeric. Curry is also used to describe any dish, such as chicken curry or lamb curry, made with a combination of some ingredients.

Curry is an original dish from India. This dish uses so many spices such as; coriander, turmeric, pepper, chili powder, paprika, cumin, cinnamon, star anise, fennel, and cloves. But you don’t need to worry, this vegetable curry recipe from us is more practical.

Compared to lamb curry, chicken curry, or fish curry, spices and coconut milk in curry vegetables are usually much lighter. In addition, vegetables are cooked much faster so it needs only a short time to cook, making it suitable for your Sahur menu. With combination of some spices, vegetables curry will give a different taste in your meal. If you feel that cooking vegetable curry is too long to cook at sahur, you can prepare it before going to bed, and then warm it right before Sahur.

  • 250 grams potatoes, peeled, washed, diced 3 cm
  • 150 grams carrots, peeled, washed, cut 1 cm
  • 150 grams cauliflower, cut 3 cm
  • 150 grams beans, cut 3 cm
  • 100 grams of dried Chinese vermicelly/ glass noodles, soak in hot water and drain
  • 800 grams coconut milk
  • 2 tbsp cooking oil
  • 1 leek, sliced

Smooth seasoning

  • 4 onions
  • 2 cm ginger
  • 2 garlic
  • 1 tsp pepper
  • 1 tbsp salt
  • 3 candlenut
  • 1 cm turmeric

Other seasoning

  • 2 cm galangal, pounded
  • 2 bay leaves
  • 1 lemongrass, pounded


  1. Heat oil, stir-fried all spices until the aroma fills the room. Stir in coconut milk, bring to a boil while constantly stirring to prevent coconut milk from separating.
  2. Stir in potatoes and carrots. Cook until half cooked.
  3. Stir in beans and cabbage, simmer again for another time until vegetables are tender. Then add scallion slices, turn off the heat. Lift.
  4. In a serving bowl, put glass noodles, flush with vegetables curry. Sprinkle with fried onions on top. Serve.
