SERABI SOLO RECIPE – Pancake or serabi is among the snacks or cake that are on the marketplace from Indonesia. Serabi is a traditional cake that seems to originate from Java. The taste differs according to areas in Indonesia. Some location are famous for its pancake in Indonesia, they are Jakarta, Bandung, Solo, and Navan Pekalongan which each has its own originality. Serabi Solo or Pancake Solo is a typical Solo snack or cake, made from coconut milk mixed with flour, which makes it tasty. This is one of Indonesian people favorites and a traditional Indonesian cake. It is consumed as a snack or normally for afternoon tea and not typically as a dessert. Serabi resembles a pancake however just cooked on one side. In solo, Indonesia, many stores and restaurants serve the cake.


  • 600 ml thick coconut milk
  • 1 tsp salt
  • 1 sheet of pandan leaves
  • 250 gr rice flour
  • 1 tsp instant yeast
  • 75 gr sugar
  • 1 egg

  • 150 ml very creamy coconut milk
  • 1 tsp salt

  1. Cook coconut milk, pandan leaves and salt to a boil, let cool.
  2. In a bowl, combine rice flour, sugar and instant yeast. Make a hole in the middle of the dough and then add eggs and some coconut milk in the hole. Stir while pouring remaining coconut milk .
  3. Mix the dough using a balloon whisk until it looks bubbly a lot. Leave it for 90 minutes.
  4. Preheat the dough in the pancake griddle over low heat.
  5. Pour 1 spoon vegetable batter in the middle part, then move the spoon  to the inner edge of the pan to form pancake.
  6. Leave until the pancake is cooked and look perforated. Then flush with 1 tbsp coconut milk. Add toppings to taste. Cover the griddle until the pancake cooked. Lift.

The most basic traditional serabi only employs dough made from the mixture of rice flour, coconut milk and coconut sugar, cooked on small earthenware frying pan on charcoal fire. Sometimes in cooking serabi Solo, people also add pandan leaves juice into the mixture to add aroma as well as give greenish color. During the cooking process, sometimes toppings are added onto the dough. Today, there are large variants of serabi toppings, in this recipe you can choose cheese, jackfruit, or chocolate. Others toppings you can add to your pancake are varied, from simple sprinkle of sugar, grated coconut flesh, sprinkles of coarsely ground peanuts, slices of banana or jackfruit, chocolate sprinkles, black glutinous rice, and oncom, to grated cheddar cheese, corned beef, shredded chicken, slices of fresh strawberry or sausage, or even strawberry ice cream.
