CRISPY AKAR KELAPA RECIPE – Earlier we have provided you with Kastengel Recipe right? This time we will give you a unique pastry served in Eid al-Fitr called Crispy Akar Kelapa or you can say Manggar Pastry. Maybe you are wondering what kind of pastry it is because the name is unfamiliar for you. Let us give you a brief explanation about Akar Kelapa or Manggar Pastry. Manggar is a name for coconut flower meanwhile Akar Kelapa is coconut root. This unique pastry uses this name because the shape of this pastry looks like coconut root or coconut flower. Ingredients

  • 5 eggs
  • 2 tbsp. sugar
  • 1 tsp. salt
  • 75 g grated cheddar cheese
  • 110 g dry grated coconut
  • 200 g glutinous rice flour
  •  25 g tapioca flour
  • 500 ml vegetable oil

Steps

  1. Mix the egg together with sugar and salt using mixer at high speed until white and fluffy.
  2. Lower the mixer speed, add the grated cheddar cheese, grated coconut, glutinous rice flour, and tapioca flour. Stir well.
  3. Put the mixture into triangle bag and use star squirt.
  4. Squirt the mixture with 10 cm in length, then put it into the vegetable oil.
  5. Turn on the heat then fry the coconut root while being stirred gently until fluffy and slightly golden. Remove from the heat and drain.

Note: Make approximately 350 g.
