Ingredients

  • 300 g cashew
  • 200 g wheat flour
  • 1 tbsp. broth
  • 1 tsp. baking powder
  • 1 l vegetable oil

Dip mixture

  • 100 g rice flour
  • 1 tbsp. tapioca starch
  • ½ tsp. coriander powder
  • ½ tsp. black pepper powder
  • 1 tsp. garlic powder
  • 1 tsp. powdered sugar
  • Salt
  • 4 pieces lime leaf, threw its rib and finely chopped
  • 1 egg yolk, freely mixed
  • 300 ml water

Steps

  1. Bake the cashew in the oven at 120°C for 45 minutes. Remove from the oven and let the hot steam disappeared.
  2. Dip mixture: Mix all the dried ingredients, stir. Add lime leaf, egg yolk, and water, then stir again. Set aside.
  3. Mix the wheat flour together with broth and baking powder. Stir and set aside.
  4. Put the cashew into the dip mixture, strain.
  5. Roll the cashew onto the flour mixture until all the surface spread with the flour.
  6. Heat up the vegetable oil, fry the cashew until slightly golden. Remove from the heat and drain. Let it cool. Store in container and serve it.
