KASTENGEL RECIPEKaasstengels, Kastengel or kue keju is Dutch-Indonesian cheese cookie in the form of stick, commonly found in the Netherlands and Indonesia.

The name describe its ingredients, shape and origin; kaas is Dutch word for “cheese”, while stengels is also Dutch word for “stick”. Unlike most cookies, kastengel tastes savory and salty instead of sweet.

In Indonesia, owed to its colonial links to the Netherlands, kastengel, together with nastar and kue putri salju are the popular cookies during festive occasions, such as Christmas and Eid al Fitr.

Kastengel on the other hand, refers to Dutch hapjes (snacks) of “cheese-fingers”, derived from Dutch kaas (cheese) and tengels (fingers). It is a small spring roll or loempia-like crepe of the size of a finger, filled with gouda or edam cheese, which have been deep fried and served with a small bowl of a spicy chili sauce.

In Indonesia itself, the process of it has been changed as it is not deep fried but baked in the oven. The other things are the use of grated cheese as its topping instead of being its filling and it is not served with a bowl of spicy chili sauce.


We guarantee that eventhough Indonesian have changed some important things in its process, but the taste remains delicious, savory, and salty as the original one.

Actually to make it, it’s similar to nastar cookies. The dough used here is also similar to nastar cookies’ dough. The differentiation of the two cookies are the shape, filling, and the taste of course.

Well, as we know that nastar cookies has round shape filled with pineapple jam. Meanwhile, kastengel has small rectangles shape about 1×3 cm and it is not filled with jam or other additional ingredients. For your info, both kastengel and nastar cookies are spread with egg yolk and sprinkled with grated cheddar cheese on its top.

  • 300 g butter
  • 2 eggs yolk
  • 380 g wheat flour
  • 20 g dried milk
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 150 g Edam, grated
  • 100 g cheese, grated

Spread & Sprinkle

  • 2 eggs yolk
  • Cheddar cheese, grated


  1. Spread the baking tray with margarine. Set aside.
  2. Mix the butter using mixer at medium speed until fluffy and soft for about 3 minutes. Add the egg yolk, then mix again for about 2 minutes.
  3. Add the wheat flour, dried milk, baking powder, salt, and grated cheese, stir well. Wrap the mixture using plastic and store it in the refrigerator for about 30 minutes.
  4. Take the mixture out of the refrigerator and mill the mixture with ½ cm of thickness. Cut the mixture into round shape with 1 ½ cm of diameter.
  5. Spread the mixture surface with egg yolk and sprinkle it with grated cheddar cheese.
  6. Bake in the oven at 150°C for about 20 minutes until well cooked. Remove from the oven and let it stand for a while until cool.
  7. Store the kastengel in the air-proof container.

Note: Make approximately 750 g.
