FRIED PINEAPPLE WITH COCONUT MILK SAUCE RECIPE – Honey pineapple is commonly made as juice, jam, or ice cream mixture because its sweet taste. Nowadays, it can be made as simple and delicious food or snack which can be tasted in your free time with your family or friends. Fried honey pineapple wrapped with bread crumb is one of tasty healthy food choices for you.

Ingredients

  • 1 honey pineapple, sliced with 1 cm of thickness
  • 3 tbsp. wheat flour
  • 2 eggs, freely mixed
  • 200 g bread crumb
  • Vegetable oil

Sauce Ingredients

  • 400 ml coconut milk
  • 75 g brown sugar
  • 2 piece pandan leaf, knotted
  • Salt
  • Cornstarch

Steps

  1. Coconut milk sauce: Cook the brown sugar together with pandan leaf, salt, and coconut milk at a low heat while keep being stirred until all melted and boiled. Add the cornstarch, then stir until coagulated. Remove from the heat and set aside.
  2. Fried pineapple: Wrap the pineapple with the wheat flour, dip in the egg then roll it onto the bread crumb while being pressed in order to make it perfectly glued. Fry the pineapple in the hot vegetable oil until slightly golden, remove from the heat and drain.
  3. Serve the fried pineapple together with coconut milk sauce.

Note: Make approximately 8 pieces.
