KOLAK WITH TWO TASTE RECIPEKolak is special food served in Ramadan which has sweet taste. Indonesian usually eat this special and sweet food as Iftar menu.

It is somewhat like compôte completed with fruits such as banana, sweet potato, dates palm etc. which is cooked together with coconut milk and brown sugar.

In this time, we will provide you with a very special kolak recipe because it is not a common recipe. We will give you two kinds of kolak that are mixed into one, so you’re gonna taste two kinds of kolak in one bowl.

Biji Salak of Potato Ingredients

  • 600 g potato, steamed, peeled
  • 100 g tapioca starch
  • 1 tsp. refined salt
  • ½ tsp. vanilla extract
  • Purple food dye

Rai Banana Ingredients

  • 3 Kepok banana, cross sliced
  • 150 g rice flour
  • ¼ grated young coconut, lengthwise sliced
  • Salt

Sauce Ingredients

  • 200 g brown sugar, finely sliced
  • 100 g sugar
  • 400 ml water
  • 1 piece pandan leaf, chopped
  • ½ tsp. salt
  • 3 cm of cinnamon

Complementary Ingredients

  • 200 ml fresh milk
  • ½ tsp. cornstarch, melted

Steps

  1. Sauce: Put all the ingredients in a pan, cook until boiled. Strain and set aside.
  2. Biji salak of potato: Mashed the potato while still hot. Mix it together with tapioca starch, vanilla extract, salt, and purple food dye. Stir well. Take one teaspoon of the mixture then round it off. Cook the biji salak of potato until well cooked and floated. Remove from the pan. Pour the biji salak of potato into the sauce, set aside.
  3. Rai banana: Mix the rice flour together with salt and water. Stir until well combined and be a soft mixture. Wrap the Kepok banana with the mixture, cook in boiled water until floated, remove from the heat and drain. Wrap the rai banana with grated coconut which has been boiled and mixed with salt, set aside.
  4. Complementary: Cook the fresh milk at a low heat while keep being stirred until boiled. Add the melted cornstarch, stir until curdled and boiled. Remove from the heat.
  5. Pour the biji salak of potato and the sauce in a serving bowl. Add the rai banana, then poured with the complementary. Serve Kolak with Two Taste as your Iftar menu in Ramadan.
