RAI BANANA WITH DURIAN KINCA RECIPE – Earlier we have provided you with a special recipe in Ramadan called Kolak with two Taste Recipe right? A kind of kolak combining some unique recipes in one bowl like Rai Banana. This time we will give you a unique recipe combines Rai Banana, Durian Kinca, and Coconut Urap. Durian Kinca is a sweet syrup made of brown sugar or palm sugar combined with durian flesh. Meanwhile Coconut Urap made of grated coconut steamed together with a pinch of salt. It sounds very tantalizing and it is easy to make it. If you want to try it at home, here is the recipe of Rai Banana with Durian Kinca.

Ingredients

  • 5 pieces Kepok banana
  • 1 recipe of Rai banana crust
  • Pink food-dye

Durian Kinca Ingredients

  • 150 g brown sugar, finely sliced
  • 200 ml water
  • 2 tbsp. durian flesh
  • 1 tsp. sugar
  • Vanilla extract
  • Salt

Coconut Urap Ingredients

  • ½ coconut, grated
  • Vanilla extract
  • Salt

Steps

  1. Durian Kinca: Place all the ingredients in a pan, cook at low heat while being stirred until just boiled, remove from the heat and set aside.
  2. Coconut Urap: Mix the grated coconut together with the vanilla extract then steam for about 5 minutes, remove from the heat and let it stand for cool. Add a pinch of salt then stir and set aside.
  3. Prepare the mixture of Rai banana crust and give some drops of the pink food-dye then stir. Dip the Kepok banana into the mixture and make sure that its surface is well wrapped by the mixture. Cook the wrapped banana in the boiled water until cooked and floated, remove from the heat and drain.
  4. Wrap the cooked banana with the coconut urap then cut according your taste.
  5. Rai Banana is now to be served together with the Durian Kinca.
